A rectification column brings greater precision and efficiency to modern spirit production.
Repeated refinement
As fermented fruit is heated, vapours rise through a series of plates or packing inside the column. At each level, part of the vapour condenses and evaporates again, repeatedly separating alcohol from water and heavier compounds.
Control and consistency
The system can operate continuously and allows the producer to manage purity and alcohol strength with accuracy. The result is typically lighter and more consistent than a spirit produced in a single pot-still run.
Tradition meets technology
Neither method is inherently better: pot and column stills offer different tools for expressing fruit, style and the distiller’s intention.
